Have you been following the college basketball tournament? My husband and I are Cal State Fullerton Alumni, and were proud of our Titans for making it to the “Big Dance”. We were so excited for the college basketball tournament and seeing our Titans compete, the hubster requested a day at home to enjoy the game with a few of his favorite Foster Farms snacks while watching the college basketball games.

I figured mini sub sandwiches would be the perfect snack for the family. Foster Farms offers a variety of Foster Farms Lunchmeats, perfect for families with particular tastes like mine, where one kid likes ham and bologna, while the other kid likes smoked turkey. I also decided to make my own turkey meatballs for my favorite – a barbeque meatball sub with Foster Farms Ground Turkey.

My turkey meatballs were super easy. I took a pound of ground turkey and added 1/3 cup of bread crumbs, 1/4 cup of panko, 1 tsp of garlic powder, 1 egg and a little bit of salt and pepper to taste. Mix all ingredients and form into balls and back at 350º for about 25 minutes. Once they were finished baking, I dropped them into a crock pot with our favorite barbeque sauce and let simmer for about an hour. When we were ready, I added a little home made coleslaw to the barbeque meatball sandwich.

Well, we certainly had a great time stuffing ourselves while enjoying the game, even though Purdue beat our Titans, who didn’t make it out of Round 1. Can’t wait to see who advances out of the “Sweet Sixteen”.
