Thursdays are crazy days for my family. The kids have minimum day at school so we rush home to finish homework before the evening baseball game. and create a quick chicken parmesan for the family. Since the chicken breast fillets are already pre-cooked, I placed them in an oven safe dish, covered with an organic marinara that I picked up at our local grocery store and added a layer of mozzarella cheese. I warmed our quick and easy chicken parmesan in the oven for about 35 minutes and it was ready to serve with a bed of fresh pasta. Now if you like your chicken a little crispier, be sure to bake it first, before you drizzle the marinara over it.
