Now that it’s almost February, are you still on track with your New Year’s Resolutions? Doesn’t everyone vow to eat healthier and exercise every year like me? Now that I’ve discovered the deliciousness of the Veggie Grill, I think it’s an even greater possibility that I can keep my resolution goals on track. Especially with each of the nine dishes is high in protein, nutrient dense, energy packed, flavor-full and under 600 calories.
When I originally thought of the Veggie Grill, I assumed it was just for strict vegetarians. Salads were pretty much what I pictured, but I ended up being wrong – very wrong!!! I am now in LOVE with Veggie Grill!
I was honored to be invited to sample the new Mindful Living menu. With my first taste of Veggie Grill, I wanted to go with the flow, and sample some of the items regular guests order. I didn’t know I was in for quite a treat!
The wonderful Alexa, General Manager at the Irvine Crossings location, started me off with a White Bean Braise – a delicious soup with white beans, kale, onions, tomato in a light veggie broth. I didn’t know how I was going to like the kale, but in all actuality, I loved it.
Next, was the Latin Living Bowl. This, by far, was my favorite! The Latin Living Bowl is an excellent blend of flavors with fire roasted carrots, seasoned black beans, large avocado chunks, tomato corn salsa, jalapenos, red pepper sauce and super grains like quinoa. I usually don’t like the jalapenos mixed in with my entree, but with this dish, it just added to the flavor.
I’m not one to order curry, however the Bombay Bowl was mild and flavorful. The Bombay Bowl is loaded with herb roasted veggies, super grains, steamed kale, cannellini beans, and cilantro green curry sauce with coconut milk, almonds and hemp seeds.
The Mindful Mash-up contains nutrients that provide dietary fiber and improve energy metabolism within brain and muscle cells with ingredients like field roasted sausage, super grains, kale, white bean braise, fire roasted carrots, white cabbage and my favorite, roasted red pepper sauce. This is certainly a dish my hubby would select.
One of the prettiest dishes was the Banh Mi Salad. The organic tofu you see was caramelized and phenomenal. Paired with chargrilled eggplant, carrots, white cabbage, fresh jalapenos, basil, cilantro and marinated kale, this was an amazing salad.
They also have a great kids menu with Chickin’ Nuggets, a kids burger, Mac n Cheese, Chickin’ Quesadilla, and Crispy Cauliflower.
All chicken dishes are made with a chickin’ veggie protein that is made of high quality organic non-GMO soybeans, wheat, peas, and grains. Tofu is sometimes added to the dishes for texture also.
Finally, I tried one of their tres chickin’ tacos and their Fish Tacos– both equally delicious, but I favored the fish taco. The meat is a blend of veggie protein and its topped with green cabbage, tasty Baja sauce, cilantro, avocado and tomato salad.
These new menu items are all under $10.00 and will join Veggie Grills signature favorites such as the Quinoa Power Salad, Crispy Cauliflower, All Hail Kale Salad, and the ever-popular Sante Fe Crispy Chickin Sandwich.
