Quick Fixins’: Ready To Serve @Minute_Rice #LoveEveryMinute

With the kids getting older, and into activities like Dance and Little League, I’m finding it harder and harder to fit quick healthy and delicious meals into their hectic schedule.  I’ve recently discovered Minute® Ready to Serve Rice and figured I’d give it a try.

I had some chicken and frozen vegetables in the freezer so I decided to make a quick stir-fry.  I generally try to plan meals a day ahead – just to make it a little easier on myself, so I grabbed the chicken and put it in a container with teriyaki sauce (approximately 1 cup) to marinade over night.

Steps:

  1. Cut up the chicken into bite sized pieces
  2. Brown chicken in skillet with 1 tablespoon vegetable oil
  3. Add vegetables (fresh or frozen; use as much or as little as you’d like)
  4. Add stir fry sauce and let simmer for 10 minutes

While that is simmering, I added a couple of side dishes, all optional.

Family Dinner

For side dishes, I picked up egg rolls from the grocery store freezer section and a packet to create quick Miso Soup.  While the stir fry was simmering, I boiled the water for the soup and microwaved the rolls for 2 minutes then put them in the toaster to get crispy while I focused on the rice.  The Minute® Ready to Serve Rice was very easy to use.  In two individual containers come in one package – enough for 1 serving each.  To prepare, take off the top and place in the microwave for a minute.  If cooking two containers, microwave for 1 1/2 minutes.  That was it!  Quick, simple and delicious rice.

Now having toddlers, planning a balanced meal is difficult with picky eaters. They aren’t so into vegetables but they have a LOVE for rice.  We make rice regularly in this house, so they can eat it with every meal if I let them. The Minute® Ready to Serve Rice passed their taste buds with flying colors.  My daughter even mixed in her veggies AND chicken to make a quick fried rice.  Amazingly, she announced she LOVED this healthy meal.

  • 1 packet of stir fry sauce
