I’m thrilled to announce I’m a new member of the Bolthouse Farms® Harvest Network! As a member, I have the opportunity to sample the delicious Bolthouse® Farms products and come up with some recipes and uses. Since we’ve recently received our very first shipment, we let the summer influence our creativity and have come up with a kid friendly recipe: Summer Watermelon Lemonade with A Hint of Mint Jell-O Dessert.

With our first Bolthouse Farms® Harvest Network shipment, we received two delicious juices:

• Watermelon Mint Lemonade
• Green Goodness

My husband – let’s call him Mr. Sneaky – downed one of the Green Goodness juices before I had a chance to look at my shipment. He absolutely LOVED it. The Green Goodness is a blend of apple, mango, kiwi and spinach in a smoothie. With the second bottle we decided to make delicious popsicles and added chunks of strawberries for the perfect summer treat.

We loved the Watermelon Mint Lemonade and decided to get creative and turn it into a great “Kid friendly” summery dessert: Watermelon Lemonade with A Hint of Mint Jell-O. Check out the recipe below:

A deliciously light watermelon lemonade Jell-O with a hint of mint.

Ingredients

• 1 cup Lemon Gelatin
• 1 cup Boiling Hot Water
• 1 cup Bolthouse Farms Watermelon Mint Lemonade
• 1 tbsp Whipped Cream or Cool Whip

Instructions

1. Boil a cup of water
2. Add lemon gelatin and stir for 2 minutes as it disolves
3. Add 1 cup of Bolthouse Farms Watermelon Mint Lemonade
4. Pour into designated containers.
5. Place in refrigerator to cool 4 1/2 hours
6. Once Jell-O is solid, garnish with whipped cream or cool whip

This is the perfect light summer dessert for any occasion. Add chunks of watermelon for an added flair. It’s even a fun recipe to get the kids involved. My princess was super excited to dive in and help me assemble our dessert.

I’ve sampled the Creamy Roasted Garlic dressing on my salad last night and am in love. Even my daughter now prefers this dressing over her previous favorite! WIN WIN since she’s eating salad on her own at 7 years old.
